Nebraska Offers Training for Meat Processors

Nebraska Extension is now accepting applications for its 2025 Small Meat Processor Management Training Program. This hands-on training is designed for small meat processing plants across the country. It aims to help owners, managers, and employees grow their knowledge and improve business operations.

The program will run from September 7–13 on the University of Nebraska–Lincoln’s East Campus. It includes in-person sessions and virtual meetings both before and after the training. Participants must also complete a virtual Hazard Analysis and Critical Control Points (HACCP) certification.

Led by experts from the university’s Center for Agricultural Profitability and Meat Science program, the training covers a variety of important topics. These include business management, food safety, employee leadership, marketing, and regulatory compliance. Faculty from the College of Business and Nebraska Manufacturing Extension Partnership will also contribute, along with guest speakers from the meat industry.

“This program is set up to provide small processors with the practical, actionable tools and knowledge necessary to navigate the complexities of the industry while building confidence in a continuous growth mindset,” said Elliott Dennis, associate professor in agricultural economics.

The program is open to custom-exempt, state-inspected, and federally inspected plants. All experience levels are welcome. According to instructors, both new and seasoned processors benefit from interactive group learning.

“We’ve worked with plant managers and owners with decades of experience, and we’ve worked with people who are brand new to the industry,” said Gary Sullivan, professor of meat science. “They all have gained something new from this program to improve their business.”

Participants will also tour meat processing plants in eastern Nebraska to gain real-world insights. “It’s important for us to get out of the classroom and meat lab on campus,” said Jordan Wicks.
