Nebraska Opened Meat Training Program

Nebraska Opened Meat Training Program

By Scout Nelson

Nebraska Extension opened applications for the Small Meat Processing Management Training Program scheduled for March 8–14, 2026, at the University of Nebraska–Lincoln. The program invited plant owners, managers, and management-track employees from across the United States.

The training offered an intensive in-person learning experience. Participants traveled to Lincoln for a full week of classroom instruction, plant tours, and hands-on training activities. Sessions focused on plant operations, business management, workforce leadership, marketing strategies, and financial decision-making.

Participants also completed virtual pre- and post-program meetings. The program included HACCP certification training delivered online. These virtual components supported continued learning before and after the in-person sessions.

The program was offered by the University of Nebraska–Lincoln’s Center for Agricultural Profitability in partnership with the Department of Animal Science, the College of Business, and the Nebraska Manufacturing Extension Partnership. The interdisciplinary design helped processors build stronger management skills while addressing labor challenges, regulatory requirements, and changing market demands.

Up to two participants per plant were accepted. Applications were due Jan. 25, 2026. The participation fee was $1,498 per plant. Participants covered their own travel and hotel expenses.

Processors who completed the full program could also become eligible for an on-site consulting visit, depending on availability. This additional support helped improve plant efficiency and compliance.

The training aimed to strengthen small meat processing businesses by improving leadership, operations, and long-term planning. It provided tools that support safe food handling, workforce development, and improved customer service.

More information and application details are made available on the Center for Agricultural Profitability website at https://cap.unl.edu/meatprocessing.

Through this program, Nebraska Extension continued supporting small meat processors with practical training and professional development opportunities.
